Fertility Friendly - Beet Maca Latte
I love coffee. I love the way it smells. I love the way it tastes. I love everything about it.
I don’t love how taxing it is on my adrenals. And I don’t love the anxiety I get after I’ve had a cup or two.
So what do I do?
I find ways to still enjoy the ritual, just with substitutes. I found this recipe scrolling on Instagram one night. I wanted it right then, but there was no way I was going to get out of bed and whip up a Beet latte at 10:30 pm. Although if I did, my husband wouldn't find it strange. I love experimenting in the kitchen! I knew I had to try this latte, and make my own fertility friendly version.
While this recipe is not going to give you the “high” that caffeine does, it certainly will give you a nutritional boost, help balance your hormones, boost energy, and of course, it taste delicious.
I whipped up some kitchen magic, and here you have a fertility friendly Beet Maca Latte.
Warm, creamy, frothy, and PINK!
- 1 Extra Small Roasted Organic Beet
- 1 1/2 cup Homemade Almond Milk
- 1 tbsp. Tocos
- 1 tsp Maca
- 1/2 tsp Ashwaganda
- 1/4 Vanilla Bean Pod
- 1 tbsp spoon Raw Honey or 1 Pitted Date
- Pinch of Cinnamon
- Pinch of Ginger Powder
Preheat your oven to 400. Rub clean beet with coconut oil, wrap in foil and place in oven for 45 minutes - 1 hour. ( For this recipe I used a leftover roasted beet I had from gluten free chocolate baking.)
Carefully remove beet from foil and add it to the blender. Add 1 cup of Almond Milk, blend and then strain. Rinse Blender and add mixture back into blender with the rest of the ingredients. Blend for 45 seconds. If your latte is not warm you can pour into a small sauce pan over medium heat. It should be warm, never boiling so that you receive the medicinal benefits of the raw honey.
With the remaining 1/2 cup of Almond Milk, use a frother or blender to get the milk nice and frothy and then it's time to play barista. As you can see from the photo above, I am not one. =)
