Sweet Potato Pie Smoothie

Don't judge me, but I'm not a huge fan of pumpkin, I much prefer sweet potato any day. In fact they are a huge part of my diet for hormonal health. Now that we're officially in the Holiday season it only seemed right to make a sweet potato pie smoothie. 

This recipe is a great meal replacement as it has protein, healthy fats, and carbs. And don't let your tastebuds fool you, it may taste like dessert but you can have enjoy this smoothie for breakfast, lunch, or dinner!

The highlight of this smoothie is the pecan mylk from Malk Organics. It is aaaahmazing and works so well in this smoothie, paired with oatmeal, a bliss ball, or straight from the bottle. Ready to taste this yummy recipe? Here's what you'll need:

Ingredients

  • 1/2 cup - 1 cup Malk Pure Pecan Milk Maple
  • 1/2 cup mashed Sweet Potato
  • 1/4 cup Steamed Frozen Cauliflower Rice 
  • 1/2 Frozen Banana 
  • 1 tbsp. Hemp Seeds
  • 1/2 tsp. Coconut Oil or Ghee* 
  • 1/4 Scrapped Vanilla Bean Pod
  • 1/4-1/2 tsp. Tonic Herb (Ashwagandha, Shatavari, or Astralagus)
  • Pinch of Cinnamon, Nutmeg, and All Spice

Optional Toppings

  • Nuts
  • Roasted Coconut Flakes 
  • Granola
  • Coconut Yogurt

*Coconut Oil, MCT Oil, or Ghee would all work beautifully in this recipe. Ghee would provide more of a buttery rich flavor especially if you use this one.

Directions

For this smoothie you will have to plan ahead as you will need sweet potato that's already been made. You can either steam or roast the sweet Potato ahead of time (which is what I always do on meal prep day because I eat sweet potatoes religiously), or if know you have some time, wash a small to medium sized sweet potato, give it a nice rub with coconut oil and a few stabs with a knife. Put it in the oven for 45 minutes to 1 hr at 425 degrees. You'll know it's ready if you give it a poke with a fork and it goes in smoothly. The frozen cauliflower also must be prepared for this recipe but this is super easy. You can either steam it on your stove using a steam basket or you can use a microwave if you use one. If you have a strong digestive system of live in a really warm climate, you can skip this step altogether and just use frozen cauliflower rice.

With your sweet potato already prepared, you will add  1/2 to 1 cup (depending on how think you like your smoothies use more or less)of Malk Organics Pecan Milk - Maple to your blender along with the mashed sweet potato, steamed cauliflower, frozen banana, Hemp seeds, coconut oil or ghee, vanilla bean, tonic herb, and spices and blend until completely smooth and add your desired toppings!
